All about...

Toulouse

Despite being famous for shades of blue – Toulouse built its fortunes on the trade of woad (a flowering plant known as “pastel” which produces a blue dye) and is now famed for its violets, which you’ll find in every imaginable form, including as colouring for your fine-dining mashed potatoes – the city is known as “La Ville Rose” (the pink city) thanks to the rosy hues of its brickwork. But between the pinks and blues, you’ll find plenty of green – parks and open spaces abound – as well architecture that ranges from Gothic and Renaissance to industrial.

Dining options include a bustling street market scene and Michelin-starred restaurants, as well as everything in between, while the presence of France’s second largest student population means only good things to lovers of a cool after-dark and vintage clothing scene.
